What's cooking today?

I know I talk a lot about food, but I really like to cook and I especially like to try new recipes.  Today I went to the farmers market to get some food.  It was raining.  Pouring.  I got soaked on the walk there and soaked even more as I was walking around.  It was great!  I really enjoy the rain.  At least for now, ask me again in a few months.  And since it was raining, there were not that many people there which was nice.  I had a great time shopping in the rain.  My veggies got a little wet, but nothing too terrible.  I love farmers markets because they are local, you can talk to the farmers, they are 100% plastic free, and they are OUTSIDE.  Awesome in every way.

So today I made some soup, some sauce, some cake, and some pasta.  First I made butternut squash, sweet potato, and apple soup.




So good.  You just let it cook in some broth for a while then take 2 ladles full and put it in the food processor.  Then mix that back in with the chunks.  It makes the soup thicker and taste really good.  Put a little nutmeg on top, mmmm:



Then I made some tomato sauce with tomatoes from the farmers market.  I really like peeling the skins off of the tomatoes, it is such a weird feeling.  And then the naked tomatoes feel really weird too.  I dunno why I like that, I'm a bit weird.  But it's so good.  I love homemade sauce, it is infinitely better than jar sauce.  I threw a bunch in the freezer for later.

Then I decided I wanted some kind of sweet or dessert.  So I made some vegan chocolate cake.  It usually has frosting on it, but I like it without frosting much better (plus there is less sugar).  There are so many things to bake with no eggs and no milk and no butter.  And they taste yummy:



Lastly, for dinner I made some pasta.  I boiled some pasta and got my sauce ready.  Then I just threw a bunch of things together to add some stuff to the pasta.  So I had some mushrooms and kale and tofu and almonds.  Sauted them for a bit and then threw it all together.  It was pretty good.  Everything except for the tofu.  I don't really like tofu.  I bought some a few weeks back because I wanted to experiment with it.  But it's been sitting in the fridge because I didn't know what to do with it.  So I figured I'd just throw it in.  It tasted fine, I just don't think I really like tofu.  And I don't think it added anything to the dish.  I think that will be the first and last time I ever buy tofu.  Not to mention it comes in a ton of plastic.  Either way, the pasta was good and the sauce was amazing.

I cooked for a long time today.  It was pretty nice.  It was raining most of the day, so I just stayed in a cooked and ate and read.  It was a nice relaxing day.  And now I have so much food to eat!  That is the best part for sure.

the soup is a fun color and it looks delicious!

I know something my mom does with tofu that you might like. You fry up the tofu until it gets to a nice golden brown color. In a sauce pot out some diced tomatoes, 1 green onion, and salt (my mom usually uses fish sauce, but a bit of salt should work too) until it gets to look like a sauce. Pour it over the tofu and serve with white rice (but knowing you, you have any number of weird grains to eat with it :P). It's simple and cheap to make and it's the only way I like tofu.
